Seasonal Baking

Wholesome, rewarding and cozy… seasonal baking is a great way to slow down and savor the season. 

There is no better way to embrace the season’s shift than with the comforting aroma of a freshly baked sourdough. It is perfect for a gradual transition from summer to fall, offering warmth and nourishment. While it is delicious, it is also packed with benefits due to its natural fermentation process making it easier on the digestive system, and supporting a healthy gut microbiome. The tangy flavor and crunchy crust complement the cooler autumn days. 

Sourdough Recipe

Ingredients:

  1. 520 grams organic bread flour (I do a 1:1 combination of stone ground whole wheat flour and organic white bread flour)
  2. 2 teaspoons fine sea salt
  3. 385 grams of lukewarm water
  4. 90 grams of sourdough starter fed 8-12 hours earlier
  5. Optional: kitchen scale, banneton

Instructions: 

1. Ensure your sourdough starter is fed 8-12 hours before mixing your dough. I find it’s best to use the starter right after it peaks. A refrigerated starter can be used as well as long as it was fed in the last 7 days. 
2. In a medium sized bowl, weigh out your flour and sea salt and set aside. In a small bowl, mix together your starter and water until it becomes cloudy and no clumps are left.
3. Pour the starter-water mixture into the flour and combine using a wooden spoon for about 2 minutes. You will be left with shaggy, sticky and heavy dough. This will be difficult to mix!
4. Cover your bowl with a damp kitchen towel and let it rest for 15 minutes.
5. Stretch and fold time! Wet one hand and pull the sides of the dough, stretching it upward and over the center of the dough. Repeat for about 30 seconds until you have pulled each side of the dough and it starts to get firm. Recover your bowl and allow it to rest for an additional 15 minutes and then repeat the process. This process can be done 3 times to build the gluten. 
6. On your last set of stretch and folds, flip the dough over and cover with plastic wrap. Leave this out overnight on the counter for 8-12 hours.

THE NEXT DAY…

7. Good morning! it’s time to check the dough, which should have expanded and have a fluffy dome at the top. An easy way to tell if your dough has risen enough is with the poke test. Using a floured finger, poke into the dough and if it indents & springs back it is ready to go.
8. Line a high-sided bowl with parchment paper OR use a lightly floured banneton (bread proofing basket) for the last proof.
9. Now for the last set of stretch and folds/shapes. Using wet fingers loosen the dough from the edges of the bowl (be gentle here). With wet hands, gently pull the center of the dough straight into the air about a foot and place it back down in the bowl, folding it on top of itself. Wait 1 minute and repeat the process again, stretching it into the air and folding it over itself. The third time, after you stretch it into the air fold it into your parchment lined bowl or banneton (seam side up). 
10. Place your bowl in the refrigerator for one hour uncovered and preheat your oven to 500F with your dutch oven inside (lid on). Perfect time to do your skincare routine while you wait!
11. Once the oven is preheated and your dough has rested for the final hour, score your dough with a sharp knife or razor blade about an inch deep. I find a crescent shaped slash is always the easiest! Carefully take your dutch oven out of the oven and lift the parchment paper with the dough on it directly into the dutch oven – cover quickly. No worries if the parchment paper is sticking out.
12. Bake for 20-25 minutes with the lid on, it should be puffed and golden brown. Lower heat to 450F and remove the lid and allow it to continue baking for 10-15 minutes, this will leave you with a deeper crust.

13. Remove from the dutch oven and let it cool for about an hour on a rack!
